Directions to prepare Tomato Rice

  6. Pour 4 cups of water into the pan and bring it to a boil. Reduce the heat to low, cover the pan with a lid, and let the rice simmer for about 15-20 minutes or until the rice is cooked and fluffy.
  7. Once the rice is cooked, remove the pan from heat and let it sit, covered, for 5 minutes.
  8. Fluff the rice with a fork and garnish with fresh coriander leaves.
