– 2 cups of basmati rice – 3 ripe tomatoes, finely chopped – 1 onion, finely chopped – 2 cloves of garlic, minced – 1-inch piece of ginger, grated – 2 green chilies, slit lengthwise – 1 teaspoon cumin seed – 1 teaspoon mustard seed – 1 teaspoon turmeric powder – 1 teaspoon red chili powder – 1 teaspoon garam masala – Salt to taste – 2 tablespoons of cooking oil – Fresh coriander leaves for garnish

To prepare Tomato Rice, you will need the following ingredients:

2. Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add the chopped onions and sauté until golden brown.

1. Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.

3. Add the minced garlic, grated ginger, and slit green chilies to the pan. Sauté for a minute until fragrant.

4. Add the finely chopped tomatoes to the pan and cook until they soften and release their juices. Stir in the turmeric powder, red chili powder, garam masala, and salt. Mix well to combine the spices with the tomatoes.

5. Add the soaked and drained basmati rice to the pan. Gently stir to coat the rice with the tomato-spice mixture. Pour 4 cups of water into the pan and bring it to a boil.

6. Reduce the heat to low, cover the pan with a lid, and let the rice simmer for about 15-20 minutes or until the rice is cooked and fluffy.

7. Once the rice is cooked, remove the pan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with fresh coriander leaves.
