Let’s get started!

Ingrediant  For Making Creamy Daal Palak

– 1 cup red lentils (masoor daal), rinsed – 3 cups fresh spinach, chopped – 1 large onion, finely chopped – 3 cloves of garlic, minced – 1-inch piece of ginger, grated – 2 ripe tomatoes, chopped – 2 tablespoons ghee or vegetable oil – 1 teaspoon cumin seed – 1/2 teaspoon ground turmeric – 1 teaspoon ground coriander – 1 teaspoon garam masala – 1/2 teaspoon red chili powder (adjust to your spice preference) – 1/2 cup coconut milk – Salt to taste – Fresh cilantro for garnish – Lemon wedges for serving

Prepare the ingredients by chopping, mincing, and grating everything you need before you start cooking. This will make the cooking process smoother and more enjoyable.

How to Prepare:

In a large saucepan, boil the rinsed lentils in 4 cups of water until they turn soft and mushy. Set aside.

In a separate pot, blanch the chopped spinach in boiling water for 1-2 minutes. Drain and immediately transfer the spinach to a bowl of ice water. This helps retain its vibrant green color. Drain again and set aside.

In a heavy-bottomed pan, heat ghee or vegetable oil over medium heat. Add cumin seeds and let them sizzle.  Stir in the chopped onions, garlic, and grated ginger. Sauté until the onions turn translucent.

Add the chopped tomatoes and cook until they become soft and the oil starts to separate.

Sprinkle ground turmeric, ground coriander, garam masala, and red chili powder into the pan. Mix well and cook for another minute to release the spices' flavors.

Add the boiled lentils and blanched spinach to the spiced onion-tomato mixture. Mix everything together, allowing the flavors to blend.

Pour in the coconut milk and stir until the curry reaches a creamy consistency. Season with salt to taste.

Simmer the Daal Palak for a few minutes until all the flavors meld together beautifully.
